Best way to secure a lid on a stock pot?
I was brainstorming, which is the best way to anchor a lid on a good old pot old, but contrive airtight? Capable of withstanding perhaps an ISP, removable and reusable, and will not blacken the food or vapors favored.
The pressure of the cover must withstand a psi. You can not make it airtight.

The 12 quart stock pot is the big fellow-clansman to the 6 quart Sovereign Chef 2 stock pot I got a few months ago to supersede both a 5 quart teflon lined pot and my 8 quart Le Creuset Dutch oven. The 6 quart stainless nerve lined aluminum corps fit the bill very, so I had vast hopes for its big fellow. And, the 12 quart has come to pass through with flying colors.
I started getting Boss Chef 2 from all the novel All-Clad lines because that seemed to be the pattern of choice on the Provisions Network’s ‘Iron Chef America’ show. And, while I certain it is not the most overpriced All-Clad railroad, I’m also undeviating that they would not have chosen it if Bobby and Mario would have had any facer with it.
I also picked this precisely pot because although it is labelled a stock pot, it does not have from head to toe the definitive turbulent peak to radius correlation, so it is not so high-priced that it is unsparing to industry with, particularly when you are using it for soups. When I use it to invent stocks, it has the one eminence I yearning most, firstly with an electrifying tier, and that is charge.
